The chemical composition of Spirulina has been analyzed since 1970, showing high protein concentration, 60-70% of its dry weight, whose nutritive value is related to the quality of amino acid. Spirulina contains essential amino acids, including leucine, isoleucine and valine. It also contains a relative high concentration of provitamin A, vitamin Bi2 and j-carotene. Spirulina have 4-7% lipids, essential fatty acids as linolenic and y -linolenic acid,27 and m-3 and m-6 polyunsaturated fatty acids.28 Cyanobacteria and algae possess a wide range of colored compounds, including carotenoids, chlorophyll, and phycobiliproteins.
